Meet Statham's new Head Chef, Ken Harker

Statham’s is well-known across Kilkenny for serving succulent farm-to-fork meals, sweet treats, organic wines, delicious cocktails, and amazing Cloud Picker coffee. We are delighted to welcome new Executive Chef, Ken Harker, formerly of the Michelin starred Lady Helen restaurant, to the Statham’s team and help us look ahead to a brighter post-covid future.

Already, Ken has helped to elevate Statham’s menu with subtle tweaks to the food concept. The mantra of Statham’s has always been to seek out quality producers, from Kilkenny and Ireland, with whom they enjoy a trusted relationship and are proud to support. Local food heroes such as the Ging family at Ballykeefe Distillery & Farm, located just 15 minutes from the hotel, Toonsbridge and Goatsbridge Trout Farm are regular favourites on the menu.

The Statham’s team are excited to welcome guests to our outdoor courtyard, one of Kilkenny’s tranquil alfresco spaces, to sample delights from the new menu which includes Small Plates of Lamb Ragout Croquettes with a Parmesan & Truffle Herb Emulsion or Smoked Trout with Apple, Fennel, Cucumber, Dashi & Tuille.

For Large Plates, Statham’s Steak Frites is a popular choice featuring Ballykeefe 7oz Sirloin, Confit Garlic Butter, Salsa Verde with Fries or, Chicken Schnitzel with Kilkenny Beer Mustard, Asparagus & Garlic Butter.

For Sweet Plate options, highlights include Roast Banana Ice Cream with Peanut Crisp, Salted Caramel & Pecans or Strawberry & Vanilla Mascarpone with Ginger Shortbread & Basil Oil.

Paul Broderick, General Manager of Pembroke Kilkenny, says “Bringing our customers the very best food experience has always been at the heart of what we do. We have listened, explored, tasted, debated, and carefully chosen some amazing dishes for you. We cannot wait to welcome you back to Statham’s. Our new Executive Chef, Ken Harker has sprinkled a little magic over the menu and we hope you agree the result is sensational. Our courtyard is now open for comfortable alfresco dining. We’re looking forward to welcoming diners to sample the new menu.”

Named after the iconic Statham-Ford Special racing car, Statham’s by Pembroke Kilkenny pays tribute to Statham’s Garage which designed and built an award-winning car on the site where Statham’s now stands.

Breakfast is served from 8am followed by mid-morning Cloud Picker Coffee and pastries, lunch from 12pm and dinner from 5pm in Statham’s courtyard each day. Walk-in diners are welcome, or contact us directly to reserve a table.
